Wellness Wednesday - Healthy Taco Bowl

On this week's Wellness Wednesday, Char shares her recipe for a healthy taco bowl.


  • 1 lb ground beef or turkey
  • 1 packet of low sodium taco seasoning
  • 1 can black beans
  • ½ yellow onion
  • 2 bell peppers
  • Cilantro lime rice
  • Cilantro crema

Cilantro Lime Rice:

  • 1 cup uncooked jasmine rice
  • 2 ½ cup water
  • ¼ cup chopped cilantro
  • 2 tbsp lime juice
  • Salt to taste

Cilantro Lime Crema:

  • Blend the following in a food processor
  • ½ cup plain greek yogurt
  • ½ jalapeno pepper seeded
  • Juice from 1 lime
  • Salt to taste


  • Add beef or turkey to a pan and break apart
  • Season with half the packet of taco seasoning
  • Cut up veggies and onions
  • While veggies are cooking (be sure to add the other half of taco seasoning to veggies while they cook), cook the jasmine rice according to the directions on package
  • Once rice is cooked add cilantro and lime
  • Drain and rinse beans
  • Assemble bowls with meat, black beans, cooked veggies and rice
  • Dish up crema (or salsa, sour cream or plain greek yogurt) in small containers and include it with the taco bowl!
