Wellness Wednesday

In this week's Wellness Wednesday, Char cooks up some chicken enchiladas.

Chicken Enchiladas
Ingredients:
3 -4 cooked shredded chicken breasts
1 cup of chicken or vegetable broth
8 -10 Tortillas
Low fat shredded cheese
1 pkg of taco seasoning
1 can Enchilada sauce
1 chopped white onion
2 small cans chopped green chiles

Cooked the chicken breasts ahead of time. In a slow cooker combine the chicken with 1 cup of chicken or vegetable broth.
Cook on low for 5 hours. Shred chicken.
Saute onion and add chiles to onion. Add shredded chicken to onions and chilies. Add taco seasoning. Spread about 2 Tbsp of enchilada sauce on each tortilla. Spread ½ to ¾ cup of chicken mixture. Add 1 Tbsp of shredded cheese. Place them in a baking dish and cook at 350 for 15 min. Take them out and sprinkle them with shredded cheese. Cook for another 3 -4 min.
